Buttercream (best buttercream recipe for me): In a saucepan, bring to a boil: 1/2 cup water 2 1/4 cups sugar Use a clean brush and cold water to wash down any sugar crystals that form on the sides of the pan as the water heats. When the sugar comes to a boil set a timer for 7 minutes, and let boil. After 5 minutes, in the bowl of an electric mixer, begin to whip at high speed: 1 cup egg whites (about 13 large egg whites) Whip until stiff. They should be done when the timer goes off. With the mixer on high speed, slowly beat the sugar syrup into the egg whites, pouring the syrup to the side of the bowl to avoid the whip. Continue to beat until the bowl is cool to the touch, about 10 minutes. Slowly add: 3 cups unsalted butter at room temperature, cut into 1 inch pieces. When the buttercream begins to jump out of the bowl, reduce the speed to low. Mix in at low speed: 1 tsp vanilla extract Beat until light and fluffy. At some points the mixture might look curdled. Just keep beating; it will become smooth again. Yield: 8 cups V a r i a t i o n s :Coffee Buttercream In a bowl, dissolve 2 tbsps instant espresso powder in2 tbsps of hot water. Whisk in 3 cups of buttercream. Mix until smooth and completely blended. Orange Buttercream: For every cup of buttercream at 2 tbsp (or according to taste) orange marmalade. Mocha cupcake: Line muffin pan with cupcake liners, preheat oven 350 F. Have all ingredients at room temperature. In a bowl of electric mixer, beat at high speed until light and fluffy: 1 1/2 sticks unsalted butter 1 1/2 cups sugar Add at medium speed and beat well: 4 extra large egg yolks 1 tsp vanilla extract On a piece of wax paper, sift together: 2 1/2 cups cake flour 1 1/2 tsp baking powder 1/2 tsp salt In a separate bowl dissolve: 1 tbsp plus 1/4 tsp instant espresso powder 1/4 cup hot water Add: 3/4 cup milk Add the dry ingredients to the butter and egg mixture alternately with the coffee-flavored milk, beating at medium-low speed until the batter is smooth. Fold in by hand: 1 1/2 ounces grated semisweet chocolate Pour into cupcake liners 3/4 full. bake 18 to 25 minutes or until the tops springs back when lightly pressed. When cupcakes are cool, top with coffee buttercream and chocolate chips. Vanilla Cupcakes:Line muffin pan with cupcake liners. Preheat oven at 350 F. Have all ingredients at room temperature: Sift into a mixing bowl: 1 3/4 cups plus 2 tbsp cake flour 3/4 tsp salt Add and mix to combine: 1 cup sugar Add: 1/2 cup plus 2 1/2 tsp warmed milk (110F) 2 large eggs 1 stick very soft unsalted butter 1/2 tsp vanilla extract Beat at low speed with the whisk attachment for 1 minute. Scrape down the bowl. Raise the speed to a medium-low and beat for 1 1/2 minutes. Add: 1 1/2 tsp baking powder Mix at low speed for 30 sec. Fill each liner three-quarters full. Bake 18 to 20 minutes, or until golden. The tops should spring back when lightly pressed. When cupcake are cool, top with orange buttercream and orange bits. I'm having a friend come over for dinner so I decided to not look like a fool and practice what I am planning to serve first.. Cooked on 10/19: Cold Soba, chicken (precooked), and miso soup It turned out pretty good (by good i mean eatable) so I decided to instead of buying precooked chicken.. I'll make some tempera.. My friend thought she was going to die and kept saying she was going to get food poisoning but at the end of the night she said she was impressed and the food I made was in fact pretty good!!! Maybe she was trying to be nice by saying it was good but hey, I’ll take it!!! Cooked on 10/20: Cold soba and udon, shrimps and vegs tempera, and potstickers. CHIPITS Brownie Chip Cookies Bake Time: 10 to 12 minutes Yield: Makes about 4 dozen cookies. Ingredients 1 1/3 cup (325 mL) golden flavour shortening 1 cup (250 mL) packed brown sugar 2/3 cup (150 mL) granulated sugar 2 eggs 1 1/2 teaspoon (7 mL) vanilla 2 1/4 cup (550 mL) all purpose flour 2/3 cup (150 mL) cocoa 1 teaspoon (5 mL) baking soda 1/2 teaspoon (2 mL) salt 3 tablespoons (45 mL) milk 1 package (225g) (325 mL) CHIPITS White Chocolate Chips 1 cup (250 mL) chopped nuts (optional) Directions Heat oven to 350°F (180°C). Cream together golden flavour shortening, packed brown sugar, granulated sugar, eggs and vanilla, until creamy. Combine all-purpose flour, cocoa, baking soda and salt. Add to creamed mixture alternatively with milk. Stir in CHIPITS White Chocolate Chips and chopped nuts. Drop from spoon onto ungreased cookie sheet. Bake for 8 to 12 minutes. Guest x_JenZ Posted October 26, 2006 Share Posted October 26, 2006 yay! finally took pictures of... 1/4 of the stuff i make at work =], i work at a chocolate store btw. ^ my pumkin patch, caramel apples dipped in orange flavored chocolate and then decorated with mint green leaves and vines. ^ for halloween, i added faces with dark chocolate. ^ bunny and pig ( white chocolate, and strawberry flavored chocolate caramel apples ) ^ beaver ( all milk chocolate, same with the tail, caramel apple ) ^ strawberry dipped in chocolate, but i added a chocolate heart on the side ^ S'mores with Caramel, we call them.."Brown Cows" and heres a pic of me makin the apples =] .. all done by hand ^ sucha ugly pic.. bad angle theres alot more, but i don't have pics of them...enjoy =] Link to comment Share on other sites More sharing options...

They were made from Friday-Today =D Its the first time i made these (except for the stirfry and tomato/egg) so they don't look pretty good =P Mini Asian Paper Cakes <3 These smelled heavenly! Stirfry and Tomatoes+Egg =D Apple Strudel(?) <3 (too bad it 'opened') I made the apple sauce too! I think it's good for a first try. I made: - Plain onigiri + smoked salmon onigiri - Chicken dumplings (The white stuff on the dumplings was just flour to stop it sticking to everything O_O) - Honey strawberries and raspberries I also had: - Chocolate frogs - Campino sweets - Grapes - And lettuce for decoration ^^ I couldn't do anything fancy because I'm in Denmark at the moment, so anything asian is hard to find. Would you mind sharing the recipe? 白糖糕 Chinese Style White Sugar Steamed Cake 製作:11 材料(七吋盤整到12件份量) 粘米粉 200克(過篩) 糖 170克 水 410克 酵母粉 1茶匙 (用一湯匙的水開勻) 發粉 1/2茶匙 製作 1. 粘米粉、水、糖拌均。 2. 用小火煮成糊狀,煮時需不停攪拌以免結硬塊,然後用篩子過濾.待冷後加入酵母水和發粉拌勻。 3. 置8小時,倒入蒸盤內(先掃油),用大火蒸25分鐘至熟,待涼切塊即可。 貼士 1. 香港的溫度大概~17-18度,11用了~8-9個鐘發酵,用保鮮紙封住個碗面放在kitchen,都沒有發酵過度,不過如果夏天整,6小時應該就得。 2. 如果用焗蛋糕的六吋圓盤整的,可以整份量的一半,厚度剛剛好。 Enjoy =D Link to comment Share on other sites More sharing options...
