I listen to mainly guitar covers of these songs:
Carrion by Parkway Drive has the most amazing riffs I've heard. Though it's with vocals that most people wouldn't enjoy, listening to covers of it is very good.Let Live by Of Mice & Men has wonderful guitar too. It's with vocals though. Those in Glass Houses by Of Mice & Men the guitar is great in it, again with vocals.Bulls in the Bronx by Pierce the Veil is another good song with pretty good vocals too.Knives and Pens by Black Veil Brides has very good guitar in it, although it's played pretty weak and the vocals suck, it has good generic riffs.

There are many songs even I can't list them but.. when thinking I come up with an idea saying no guitar song is sadder than the Crow one. [in the movie, Brandon Lee played a one about 1 minutes... no sadder than it..]

The song by Extreme is pure guitar. Used to be quite the romantic song back then. 
The others are almost pure acoustic guitar songs with enough percussion & bass to lay the rhythm. They lean towards flamenco.

since were mentioning songs with lyrics, i think black by pearl jam is quite beautiful in a darker sense. the chords are pretty standard, but they fit really well with the poetic lyrics. you dont find song writing like this anymore.

id love to be able to bang out killer lyrics out of the blue. but i think my brain is too left sided for that. supposedly neil finn wrote dont dream its over in one sitting, lyrics and chords.

as for creep, its a good song but i dont think its anywhere close to their lineup of truly beautiful songs such as street spirit, fake plastic tree and a buttload more. but there is a really good cover (out of the millions out there) of creep by gina jeffries.

yeah, poetry is not easy. I had to do some for a creative writing workshop a long time ago, and I just don't have it in me either. 
There was this older lady in the workshop who kinda sucked at fiction prose, but when we got to poetry later in the workshop, she kept blowing us away with her poems. I found them  extremely deep and witty to boot.
