The worst thing about Windows 10 is that you cannot disable the Updates option, so in the end it will end up trying its best to update and as you said sometimes the update would be rejected (didn't happen with me, but happened to a couple of people I know). 

You can also disable Windows 10 updates with some tweaks to Group Policy. But, Microsoft pushes their updates to protect Windows 10 from attackers. So, whenever they push their updates it will be the best option to update it ASAP.
