Dear @larus @Min2206 @Thong Thin @Wuzetian and all other chingus who'd love to know more about Sri Lankan ambarella curry, here is how we cooked it today.

 

Sri Lankan Ambarella Curry

 

ingredients

 

5 raw ambarellas

2 cups of thick and thin coconut milk

1 green chilli (cut into 3-4 pieces)

1 stalk of Curry leaves

1/2 big onion slices

1/2 stick cinnamon 2 inch long piece

1/4 tsp turmeric powder

1/2 tsp red chilli powder

2 tsp roasted curry powder

1 1/2 tsp sugar

salt to taste

 

instructions

• Wash Ambarella and towel dry. Peel and cut into lengthwise quarters. If the center is too tough and fibrous, cut around the center leaving the center out. Discard the peels.
• Put ambarella quarters in a clay pot. Add 3-4 pieces of green chilli, curry leaves, 1/2 big onion slices and cinnamon sticks.
• Then it's time to add turmeric powder, red chilli powder and roasted curry powder all in to the pot.
• Mix well everything with adding 2 cups of thick and thin coconut milk. Add a pinch of salt to taste.
• Cook well in semi heat. Add sugar when it's semi cooked. Simmer for couple of minutes and switch off.
• Do not let it boil. Otherwise the coconut milk will curdle. The curry should be semi thick.
• Serve hot with rice and other curries.

This is how our ambarella curry looks like. We already had lunch so it's half of what we cooked! Use a wooden spatula to cook and serve!

I love all types curries and is yummy to eat when the rice is pipping hot.

I saw some FB post that some Sri Lanka  also use fresh olive to cook curry, no?

Yes, most people use olive oil to cook curries etc in my country. But we only use pure coconut oil for cooking purposes at home.
