@sadthe1st ~ indian cuisine is actually very weather and geography oriented. home cooks all know this and so will change the ingredients accordingly. but you won't find such in restaurants as much. so many of the hearty/creamy dishes are meant for winter/rainy days and are also from cooler/colder climates. so we have what is known as 'warm' ingredients (meant for winter) and 'cool' ingredients (meant for summer heat). cream and nuts are all for cooler days as they are supposed to add warmth to the body whereas yoghurt based dishes are meant for summer as it removes some of the heat and dehydration from the body.... so there is a kind of logic to how we cook at home...

now i'm hungry, and still have to wait for an hour or so for the peak lunch crowd to scatter..

have you had egg uttapam? we have it at home at times...so can see how a restaurant would glitz it up by adding some cheese... basically like those cheese masala dosas. sounds strange but actually not bad when you eat them...
